KAW--Glenda's fudge pie

Glenda, from the KT, posted her fudge pie recipe last week, and I decided to try it for Easter. Recipe to follow.

I used butter in the pie crust, and cut it in with a dough scraper. Green thing in cup is an ice pack.



Glenda's filling recipe, trebled, was perfect for two deep dish pies, which took a few more minutes baking time--she says hers bake in 30-35 minutes:

I decided to add my own twist--crushed almond toffee on the top:



A few minutes before the pies were done, I sprinkled on the toffee bits to give them time to melt, then hit them with the broiler for a few seconds:

So gooey and crunchy and good! Thank you Glenda!

****Fudge pie****
1 stick butter
1 cup sugar
1/4 cup flour
1/4 cup cocoa
2 eggs
1 tsp vanilla

melt butter, stir in remaining ingredients. Pour into unbaked regular pie crust.
bake 325º for 35-40 minutes
Let it cool completely before cutting.

*****mine bakes in 30-35 minutes

You will think its not done, but it is. It looks like the middle has fallen, That's the way it is supposed to look.

    I love my marble for baking!

    We had a crowd for dinner, and almost everyone picked off the violets and left them on the plate--even after I told them the flowers are edible. But, the eggs were a hit!

    mama G - people probably thought the flowers were too pretty to eat! oh, the lengths you go to... so much energy you must have!

    did the pie taste like fudge? super sweet? don't know why i'm asking... I'll never make it. scrambled eggs and grilled cheese are cooking to me these days!

    desertsteph! :) When it's completely cool the filling has the consistency of soft fudge, or the gooiest brownie ever--kind of like the chocolate truffles made with egg yolks--way back when we weren't afraid to use raw eggs. I shorted the sugar by a tablespoon, or so, from each cup, and it was still sweet. See pic #6, with the filled pie shells and crushed toffee on the counter? At that point the filling was so gorgeous and tempting, if it hadn't contained raw eggs that bowl would have been licked clean!

    We had an assortment of desserts for dinner (my mom's peach and cherry pies, cinnamon cookies I made with the pie crust scraps, and a peanut butter/chocolate mousse my FIL brought), so there was left-over fudge pie. I think it was even better the next morning.

    You should try it--it's so easy. Melt the butter in the MW, then stir everything else in with a whisk or spoon--no need to drag out the mixer. Use a purchased pie shell, or just butter the pie plate and skip the crust. Since it was the first time I'd tried the recipe I used AP flour in the filling, but next time I'm going to try whole wheat. And maybe some chia seeds sprinkled in with the toffee. ;)

    My yard is full of violets--I picked them the evening before, and left them in a bowl of water so that any bugs could wander out before the flowers were placed on the eggs. I always pick daffodils to decorate the tables, but this year they bloomed too early, and I wanted something spring-y. My dear FIL brought me a pot of forced, pale yellow daffs, so at least the dessert table had flowers.

    But you're just mean mean mean.

    Chocolate pie. Oh, my. Mean.

    I had Pizza Hut for Easter because I 1) don't like TexMex and 2) am out of creative ideas for the ingredients I do like at my restaurant job.

    Ok- quick question- I keep following this thread because it looks so good. Does this filling taste like brownies or something different?

    It seems to be an extra buttery brownie recipe so I'm just wondering before I make it because I am not a huge brownie fan (my kids, on the other hand, will demolish a pan in an hour).

    CEF, I sincerely apologize for enjoying that yummy, gooey, fudgey, toffee-crunchy, chocolatey smooth pie as much as I did. ;)

    cleo, yes, it tastes like really soft brownies. When the filling is poured into the pie shell it looks like fudge that's ready to set, and when it's refrigerated it has more of a consistency of soft fudge. Your kids will love it.
