What do you eat for breakfast?

My most challenging meal of the day! I have to eat the same thing every single day because my brain doesn't work in the morning.

Right now I eat 7am-12pm: 1/2c bran buds with 2% milk, yoghurt, apple, small latté and hardboiled egg. It's about 600 cals, my daily calorie goal right now is a very luxurious 2500...thanks pregnancy! (and dog walking)

We used to eat fruit and veg smoothies but in cutting down on sugar for my husband, the smoothies went away.

What do you eat?

    Thank you all so much for your interesting and very varied routines!

    I take the dog for a walk every morning at 630, between that and pregnancy I would probably kill someone if I didn't eat a hearty breakfast. I can't imagine not eating until lunch. I find my breakfast right now is a little too sugary for me (I think I am prone to sugar crashes) so am trying to boost up protein and cut down on sugar, but at the same time I NEED my bran buds if you know what I mean.

    Robo, i eat my b/fast bar typically at 6:30-7a but I have fruit or another bar or yogurt at 10. Could not last w/ the 1 bar thru lunch

    Lynn, will you share your Morning Glory recipe? I can't seem to find them anywhere since we moved to Colorado. Actually I did buy them once from TJs but they were bland and not worth the calories.

    I have to eat breakfast or I can't function!

    Coffee and either:

    Steel-cut oatmeal

    Plain Fage yogurt with blueberries and walnuts

    Banana with peanut butter

    2 poached or hard-boiled eggs

    Sometimes just OJ and coffee. Sometimes fruit and/or yogurt. Occasionally scrambled eggs. Oatmeal in the winter. Rarely muffins or pancakes.

    This morning I had sliced avocado and homemade roasted tomato salsa.

    Some interesting ideas here....

    oatmeal with blueberries before the commute - fruit or yogurt at mid-morning. Seems like more protein would be a good idea, reading the other responses.

    The weekends are more splurge-like with omelettes, scrambles, frittatas/tortilla espagnola, breakfast tacos/burritos, and occasionally pancakes/waffles/french toast (almond flour sounds great here). Brunch/breakfast out is also more common, esp after hitting the farmer's market.

    Per d_gw's request, here's my recipe:

    Lynn's Morning Glory Muffin Recipe

    Ingredients:

    1 cup whole wheat flour

    1 ½ cups All-purpose flour (or, use all All-purpose flour, your choice)

    1 cup sugar

    1 Tbs cinnamon

    2 tsp baking soda

    ½ teaspoon salt

    1 cup chopped walnuts or pecans, your choice

    ¾ cup flaked coconut

    ½ cup raisins, I prefer golden raisins

    3 eggs, slightly beaten

    1 ¼ cup applesauce (takes the place of oil or butter)

    1 tsp vanilla

    1 Granny Smith apple, finely chopped (I leave the peel on
    it)

    2 cups grated carrots (use your food processor if you have
    one; I don’t peel mine)

    1 8oz can crushed
    pineapple, drained thoroughly.

    Directions:

    1. Preheat the oven to 350-degrees
    2. Grease or use muffin papers for 24 muffin cups
      (I think using the papers is easiest).
    3. In a large mixing bowl, combine first 9
      ingredients (flours through raisins).
      Set aside.
    4. In a medium mixing bowl, combine the rest of the ingredients (eggs through pineapple).
    5. Spoon wet ingredients into dry ingredient bowl, mixing gently until just combined.
    6. Fill muffin cups with batter. I find that it fills 24 cups quite full.
    7. Bake at 350-degrees for 20-24 minutes. Check after 20 minutes with toothpick.
    8. Cool for 5 minutes before removing to a wire rack to continue cooling.

    *These muffins freeze well.

    Whoa!! You guys eat much more healthily than I do!! But I am not a big sweet eater and I really need/want the protein of a "traditional" breakfast. So I tend to some combination of meat or eggs, sometimes both. I like omelettes and make them often, usually with some sort of veggie included as well. And cheese! Bacon sandwiches are hits also. Or smoked salmon and bagel. And this will probably make everyone else cringe but I really like liver sausage/liverwurst/braunschweiger on toast.

    I sometimes have oatmeal in winter but other than that I dislike cereals - like eating sawdust or sugar, depending on what kind. And yogurt to me is a snack food....or a topping for fruit for dessert.

    I think a lot of my preferences are related to my upbringing by British parents - Brits like their "full" breakfasts and that's what I grew up with :-))

    I was not one for breakfast until I did a diet change and now actually enjoy it. We are pretty low carb and try to stick with whole foods most of the time and limit dairy.

    Sometimes I like to make this egg breakfast casserole ahead of time. I vary the veggies and meat according to what I have on hand. During the week people can reheat a portion for themselves. I almost always include a green leafy, whether spinach, kale or chard or whatever else I might have growing in the garden.

    Another good breakfast is sweet potato hash with turkey sausage. I shred the sweet potatoes earlier in the week and then can just cook them in the pan with a little coconut oil and chipotle pepper.

    We eat a lot of eggs, normally 2 per person. Sometimes this is done as an omelette, sometimes I will put leftover veggies in a ramekin with a bit of coconut milk and break the eggs over the veggies and bake them in the toaster oven. Sometimes I pour salsa in the ramekin and bake the eggs in that. Avocado would round that out.

    I like to cook bacon in the toaster oven where I do not have to monitor it as closely. When I have asparagus growing, I might saute those quickly, break the eggs into the skillet, put the lid on top to let it steam and sprinkle furikake on for seasoning.

    When I am more organized, we will have a paleo baked good (normally made with almond flour, almond butter, or coconut flour) with some breakfast meat and fruit. This is made possible by the fact I can ask my daughter to make the baked good the day before.

    On my list to try are these make ahead prosciutto-wrapped egg cups. I need to get my act together and do them soon. I may use turkey bacon.

    Ooooh, Gardengal, I love bagels & lox! But, as we've cut way back on wheat and rice products (empty carbs) I missed our weekend bagels & lox terribly. And then I found this crispbread at Trader Joes, and now we have my adapted version pretty much once every weekend. This is how I make them: I put a piece of waxed paper in the microwave, large enough to hold 4 crispbread slices (2 per person). I lightly butter them with Smart Balance (a butter substitute), and warm them in the microwave for 20 seconds on power level #1. I then top them with Greek cream cheese, mashed avocado, thinly sliced sweet Vidalia onion, (tiny) chopped tomato, and thin slices of lox. Love it!

    By "Greek Cream Cheese" I mean this version:

    Lox on flatbread sounds wonderful to me :-)) I like mine pretty simple so just a schmear of cream cheese and capers. But I do like my bagels and breads.....unfortunately.

    btw, I've also been known to eat humus and naan for breakfast :-))

    !Robo, when I was expecting my first (24 years ago, yikes!), my doctor said that if I'm going to have cereal for breakfast, have Total because it's chock-full of vitamins and minerals, including calcium. I added blueberries or bananas or raisins on top.

    I loved that OB: he also told me that if I'm going to have a frozen dessert, then instead of the sorbet I'd been eating for my cholesterol I should have ICE CREAM! Calcium!

    I have to have a plan for breakfast or else I crash and then nosh all day.

    I make baked oatmeal bars on the weekend, these will keep 10 days in the fridge, and they freeze fine too. Rolled oats, cinnamon, vanilla, daily product of your choice(I use unsweetened soy or almond milk), eggs, baking powder- then the goodies, mashed bananas, crushed pecans, and pumpkin seeds, golden raisins frozen wild blueberries. Bake for 45 minutes then cut into wedges and store in fridge. It is very good for me to know this is in the fridge so I can grab a wedge. I often eat cold, but I sometimes reheat and eat in a bowl with more warm milk and more blueberries.

    Other breakfasts I eat are:

    • cottage cheese with blueberries and pecans
    • oat bran cereal
    • fried eggs on a bowl of arugula with drizzle of balsamic, grilled ham slice is optional
    • english muffin w/egg and tomato slices
    • english muffin with lox and tomato slices
    • kashi go lean cereal with a banana and soy milk
    • smoothie with peach, soymilk, cinnamon and rolled oats
    • lemon zest luna bar

    First I have a cup of Italian espresso with steamed milk. Then after my morning walk, I fill a bowl with fruit , depending on the season: berries in the summer months, apples or pears in the winter. I add a dollop of plain Greek yogurt (sometimes full-test and sometimes fat-free), then top it with chopped walnuts, and sometimes a bit of banana. Day in and day out!

    Another thing we like is baked oatmeal. An 8x8 dish makes several day's worth for the two of us. Our favorite is banana bread baked oatmeal or apple pecan.

    At least twice a,week I try to have 2 eggs, sunnyside up, 3 pieces of bacon, and 1 slice of Oatnut wholegrain bread. Other days it's an English muffin with jalapeno jelly and cream cheese, a plain Greek yogurt w/1/2 tsp of honey, and I add a few black berries and rasberries, both organic. And of course coffee.

    Tina, do you have a recipe? Oatmeal and Cream of Wheat are my go to winter breakfasts.

    Another who has to get something eaten fast when I wake up or I feel pretty sick, Robo I agree it is probably a blood sugar/metabolism thing.

    I have the same breakfast every morning: glass of OJ followed by 1/4 cup of instant oatmeal with skim milk and Stevia for sweetening and coffee.

    I enjoy classic breakfast stuff like bacon and eggs and toast but only have that when I eat out. I am advisor to a student organization that holds our advisory board meetings at Denny's at 7 am every month in the academic year (don't ask) so I usually get my fix that way :).

    While we were moving our DD up to grad school in Colorado Springs we all had breakfast at this fantastic restaurant in the downtown area called Over Easy. My sister-in-law and I decided to order their Tatum's Avocado Toast, as we both love avocados. It's basically a slice or two of toasted thick multigrain bread, topped with mashed avocado and a poached egg. Over that is sprinkled sea salt, crispy bacon (chopped?) and some shredded cheese. I loved it and have made it a couple of times on the weekends for us since then. I also top mine with fresh baby arugula.

    I am extremely low carb these days, and if I eat breakfast at all, it's eggs or full fat plain yogurt. I feel so much better eating higher fat and lower carb, so I never eat grains or drink juice for breakfast. When I did eat rolled oats regularly for breakfast, I was always hungry a couple of hours later. Now, when I eat higher fat and some protein, I'm not hungry until early afternoon. A few days a week I fast until maybe 1pm and then have lunch.

    It is very rare for me to eat breakfast-- I love breakfast foods but I prefer them later in the day. Quiche is probably my all-time favorite but I seem to remember that you are quiche averse, Robo?

    When I did either eat breakfast myself or make for others it was always pretty simple--

    • a course bread toasted with a thin smear of pb.. or hummus with a few betties..
    • steel cut oats with pecans/almonds and butter..
    • bob's redmill 10 grain pancake/waffle mix made with diced apples, pecans and cinnamon (without syrup). These were especially great because you can freeze them or make them ahead for the next few days.
    • eggs + veggies + herbs (especially asparagus and shallots) but I just don't care for eggs in the morning.
    • Here's the oddball but a fav.. white bean soup! It's filling, full of protein and savory.

    as far as PB undoing a healthy breakfast, that's bunko. I didn't read the statement but pb will actually slow down the processing of converting bread to blood sugar so it's in fact beneficial to a toast breakfast. That said, you don't want to use the toast point as a shovel for pb lol.. but it's much better than jam or even dry toast.

    Summer - multigrain cheerios, skim milk, strawberries or blueberries.

    Winter - packet of flavored instant oatmeal mixed with 1/4 cup muesli, diced apple, pecans.

    Sometimes I have Greek yogurt and a banana instead of cereal.

    I always have a couple cups of good coffee.

    Now that I am retired I can enjoy a more leisurely breakfast most mornings. But I still am in the habit of making some of the same things. Because it is so hot, I am still getting up fairly early to run or walk with my neighbors & I like to have some fuel before a run. Lately a cut up peach and a handful of blueberries with a large spoonful of Greek yogurt. And black coffee of course. I will vary the fruit and sometimes it's strawberries, raspberries and blueberries. Other things I eat are:

    Overnight oatmeal (Bib's Red Mill) made with Greek yogurt, almond milk, chia seeds, cinnamon, vanilla, a tsp of honey. I add fruit in the morning and sometimes chopped walnuts or pecans.

    An egg (soft boiled or over easy) on whole wheat toast.

    Sometimes before a run I will have a piece of toast with crunchy peanut butter and a half a banana.

    Coffee, always coffee.

    Skipped down to say I've been eating the same breakfast for years now: 2 boiled organic eggs w/ salt & pepper & a bowl of fresh organic seasonal fruit, plus a 16 ounce mug of green tea & a daily multi vitamin. It's the magic combination for me; I don't get hunger pangs before lunchtime, nor do I get tired. If I need breakfast to sustain me for even longer, I add some dairy. I make a cheese omelet w/ butter & herbs using 2 eggs. I find if I eat grains for breakfast, I get hunger pangs, but the combo of protein, fat & fiber w/ green tea really keeps me energized & not hungry.

    I vary it.

    • fresh green juice,
    • a green smoothie,
    • a strawberry, banana, oatmeal smoothie,
    • carrots and cherub tomatoes.
    • a couple of cucumbers with my favorite vinegar
    • roasted veggies with balsamic vinegar and mustard and some roasted chick peas.

    Sometimes last night's pad thai or pizza, sometimes a homemade cookie, sometimes TJ's flourless seeded bread toasted with kerrygold butter, ...or oatmeal with brown sugar, or bacon and 10 grain pancakes.

    It varies so much, this morning was a bowl of blueberries and some leftover jalapeno grits.

    Always coffee with cream, and orange juice.

    I couldn't stand dry cereal or instant oats as a kid so drank hot Instant Breakfast for years and years. Then moved to smoothies but the daily clean up got to me.

    Started cooking 3 days worth of steel cut oats and packing into servings. I'd top with chunky applesauce, raisins or banana. Had to add protein though, hard cooked egg or sugar free cocoa.

    In between those ruts I was gorging on toasted bread. Now we don't keep bread in the house! If we have some left over I'll make baked French toast. Better bread plus eggs and yogurt than bread and butter!

    Found that I don't need lunch if I eat leftovers for breakfast so I do that most days now. I ate chef's salad [with ONE roll] this morning and will have baked chicken, carrots and brown rice tomorrow morning. I eat, just not in a single meal. A banana, a cup of cocoa, a hard cooked egg, one ounce of sunflower seeds and so on if and when I feel a bit peckish.

    I love eggs. I love eggs anytime of the day and any style. I also enjoy these. My favorite is with fresh peaches or blueberries on top.

    Panfakes

    2 eggs

    1 oz. Greek yogurt (1/2 for batter & 1/2 for garnish)

    1/2-1 tsp. vanilla (I just pour)

    occasionally I'll add a little stevia

    1/2 tsp. baking powder

    Mix all ingredients together and beat with fork. Pour into fairly hot skillet. Will bubble up pretty quickly, turn over, wait a few seconds, remove and place on plate. Top with yogurt and fruit.

    Sometimes I'll change it up by adding cinnamon or cocoa...whatever I'm feeling. They really are so much better than it looks in print.

    I will usually have rice cakes with peanut butter or an eggbeater omelet with a little cheese and Canadian bacon. I prefer eggbeaters to real eggs.

    D-GW......Re peanut butter.....I started the recent peanut butter thread. I tried to like Smuckers Natural but the stirring and thickness drove me crazy. Went back to good old Jif...so you're not alone! Hey, I just got my Medicare card so it's all downhill from here anyway...lol.

    Usually eggs in some form or another. They have to be real eggs, liquid egg product does a number on my gut. Or leftovers re heated. I can't tolerate a high carb breakfast. Get dizzy and walk into walls....

    Occasionally rolled oat oatmeal, with whole milk. I find instant oatmeal repulsive, for one. Also not enough protein.

    Coffee. I've managed to switch to black unless it is bitter. Then, a little whole milk helps.

    I hate fixing breakfast. I usually don't want to eat anything until 2-3 hours after getting up. This morning I had mac salad. The best breakfast is gently nuked pie.

    joaniepoanie, my Costco sized Jif is almost empty and because of your thread I am researching for something healthier. I usually hate the oiliness of natural PB. If I try natural again I definitely will buy the smallest size.

    Always: 1/2 (or more) pot of coffee with just a bit of powdered creamer. One packet of lower sugar maple/brown sugar instant oatmeal with about 1/2 cup of 2% milk.

    Once in a while, I'll add some fruit. Usually fresh strawberries, sometimes a banana. Not ON the oatmeal, though. Separately. Can't mix them, you know. LOL.

    Nothing. I usually do a 2 hour hike or workout in the morning and have never been one to be hungry when I wake up. First meal is a protein shake and some raw nuts around 11 am.

    I'm one of those eat-to-live people and not a live-to-eat person, so not your typical eater. If I'm busy I can go all day without eating and not even be aware of it. When my Mom visits and we go out for an all day shopping trip, she has learnt to bring hearty snacks, because she knows lunch time will come and go, unnoticed by me!

    Here is a Baked Oatmeal recipe I found on BackyardChickens.com

    It is delicious and can easily be reheated. You can also put less sugar.


    Baked Oatmeal

    1/2 cup melted butter
    1 cup brown sugar
    2 eggs
    3 cups quick oatmeal
    2 tsp baking powder
    1 tsp salt
    1 cup milk
    1 apple chopped
    1/2 cup raisen or dried cranberries
    1 tsp cinnamon

    Mix all together and bake at 350 degrees in a greased 9x13 pan for 20-30 minutes.

    I'm boring....I love my morning green and fruity drinks, made in the NutriBullet, usually with some protein powder. Sometimes, I'll enjoy an omelet with veggies, or an egg/cheese/ham/etc. "muffin".

    I'm like chispa, an eat to live person....only that will never mean not eating, especially before my workouts! For my body's system, that would not be a good thing. ;-)

    Lyban, I use Sunwarrior Plus organic plant-based protein powder. No sugar and no flavor added. It's big scoop included, so sometimes I only add a half scoop but it's still a good bit of protein, and when I make a green shake I also use a blend of chia & flax seed.

    What a healthy group we are!

    I can't eat right away, but I need caffeine right away. Cup of black tea with a dash of milk. Then, depending on my schedule, it might be 20 minutes or an hour later, I have one of the following, depending on how much time I have:

    One piece whole grain toast w/ PB. If I have this, I usually also have a banana later in the morning. Or, I have a banana before I exercise, then have the toast later.

    About a cup of 2% greek plain yogurt, topped with a drizzle of honey and a lot of berries. (Discovered this breakfast at my hotel in London in April and became addicted.) Sometimes sprinkle sliced almonds on top.

    Scrambled egg or omelet, sometimes w/ one piece of toast.

    Occasionally, a Think Thin bar.

    Same here, when my husband and I met one of the first things we had in common was our secret wish that science would invent a pill one could take instead of needing to eat every day ;).

    However same here rhizo, I MUST get something into my body when I get up, or when I'm very hungry, otherwise I get physically ill. I'd collapse (literally) if I tried to do some kind of intense workout for 2 hours in the morning with no food.

    I have my coffee first and then before work or with grandbaby, I have a bowl of Kashi Go Lean with milk and raisins. For some reason, I never get tired of this. On the weekends, I will make a "real" breakfast when my beloved requests it.

    On Sunday I make ahead little omelettes with what ever I have on hand.
    I cook them in the Instant Pot, then I can grab and go.

    4boys2, those remind me of the mini frittatas I made last summer with cherry tomatoes from the garden. Never did it once this year for some reason.
