Are you opposed to pulling a nice light color out of your granite? Galley kitchens are my favorite. I would probably choose a pale colored tile- either a regular subway or a square tile- and lay the tile in a grid pattern, not brick. I am a bit bored of brick pattern and grid has been used in the past as well. So those are my two cents. Good luck with your kitchen. The elements sound lovely.
