Kitchen finishes... can't decide on floors, backsplash, countertop

Hi everyone... we are planning to use Ikea Ringhult (glossy white) cabinets with no handles (push-open). I'm having trouble committing to finishes in the kitchen. I need to choose floors, countertop, and backsplash. For the backsplash, I am leaning towards plain white subway tiles with dark gray grout. We want to avoid white grout because it gets dirty quickly.

For the flooring, the Lowe's salesman suggested these ceramic tiles, which I like but am not set on: https://www.lowes.com/pd/Emser-Strands-8-Pack-Twilight-Porcelain-Floor-and-Wall-Tile-Common-12-in-x-24-in-Actual-11-81-in-x-23-7-in/50093840. I like the textured look and want to avoid glossy floors. Anyone have a floor they love?

For countertops, we love the look of concrete but I've heard mixed reviews about living with it. We don't like granite but would consider quartz or a high-end laminate. I am leaning towards a dark-colored countertop because the Miele induction cooktop we are planning on is black, and I'm worried a black cooktop in white countertops would look bad. But, most of the kitchens I see on Houzz that I love have white countertops, so I am torn.

My overarching concern is whether using darker colors for the floor/countertop/grout can mesh with the glossy white cabinets... I worry that the dark colors are a bit more traditional and the cabinets will be more modern so I want to make sure we are choosing materials that work together, and I'm having trouble findings pictures of kitchens with this look. I'd love any advice or pictures you have to share!
