Any particular reason why you are planning on raised beds? You have to fill them with soil and they dry out much faster than just growing in the ground. I'm of the mind that unless you are disabled, have caliche, or have super heavy clay, you are better off growing in the ground.

I uncharitably lump not being as young as you used to be in with disabled for brevity. That's a completely legitimate reason.

I would be careful with all the organic matter. Garden soils should not be more than 10% organic matter at the most. Anything more than that is polluting. Also, manure is pretty high in Phosphorus and most garden soils tend to have too much of that already. I wouldn't add it without a soils test.
