I'm not a plumber and don't want to die. In slab propane fire ring

I've talked to a local general contractor and he told me i'm doing this ok...being in a small town of 1500 people, means the general contractors dont always have to know what they're talking about.

So what i'm currently planning to do is to have the propane come out of the house to a T... one side will go to shutoff then a grill, the other will have a shutoff, then be flexible pipe approx 12' under the slab to the fire ring. I'm going to use a galvanized water trough for the form and outside edge of the ring. the flex line will 90° up as iron pipe and come into the bottom or bottom of the side of the water trough and then connect to the flex line of fire ring kit.

Is there anything else i should consider? one thought i'm having is controlling the flame. can i put something after the shutoff so i dont have to have anything else in the slab? maybe just shutting the shut off half way (or whatever) will control the flame enough?
