Pedestal sink? And I disagree with a pocket door because of the sound and privacy. You might as well put up the kind of door that goes on a stall in a public restroom.

The 3rd one fits the space the best. I like the angled cut and the float makes the room seem larger. I think I would also go for a non square or rectangular mirror to flatter the ceiling's angles better. Have you considered a pendant? Slightly off to the right would look great.

I am using floorplanner tool, it's very easy to use and gives a lot of options.

I agree with what you have said about mirror, I was thinking about either:

- a rectangle sloped mirror (custom cut) that follows the slope of the ceiling in the upper left corner with slightly rounded corners.

- a moroccan style mirror, something like this, just a bit bigger:
