Hi Anna.... don't use flat no matter how washable they say. Have you seen a flat paint car before? Do you notice how water "sticks" to it? Same goes for your kitchen. Go with an eggshell at minimum. The subtle shine actually helps hid dirt and imperfections.

My parents have flat paint in their kitchen on the ceiling. There is no backsplash, and that's not been a problem for the walls (which I think are just slightly not flat/matte). Turns out the ceiling, despite being 9', is not safe from red wine spills. The solution was to paint over the splatter zone:
