the first picture is nutgrass (a sedge.) The other pictures look like unidentifiable miscellaneous weed grasses. Ask you questions in the lawn or turf forum.

How often do you water, and for how long? Most of California waters daily.

Is your lawn hybrid bermuda? If so, don't be tempted to overseed with bermuda.

How often do you mow? Bermuda can be mowed at the lowest setting on a rotary mower and mowed many times per week. Many weeds cannot take the repeated stress of low mowing. These will probably adapt to the low mowing, however. You could probably kill the weeds and not the bermuda by painting RoundUp onto the tall weeds after 4-5 days of growth. Dip a really soft paint brush into the RU, tap off the excess, and lightly drag it across the weed wetting only the blades of weed grass. Give that a few weeks to die and it should look a lot better. Careful not to drop RU onto the bermuda.

The first pic does not look like nutgrass to me. Nutgrass does not grow in tight bunches like that.
