Age old discussion - where to stop the backsplash?

Houzzers, you’ve been so helpful during the remodel process, please weigh in now! I think we’re going to tile only from counter to bottom of the floating shelf/cabinet for most of the kitchen. But how high do we go behind the range and hood (which isn’t white, but has the protective film on still)?

Up for discussion is:

Do we tile to the ceiling behind the hood?

Do we tile to the top of the cabinet line behind the hood?

Do we tile only to bottom of the hood?

Do we tile up to window height on the floating shelf wall, or keep it below the first shelf?

We are using bedrosians cloe tile in “white” which is actually several different shades. I already have tile and have enough for any scenario.

Also those floating shelves are easily removable and will come down for tiling, I just hung them for a visual. Thanks for your advice!
