sorbet/ice cream experts

I have made this recipe before by borrowing someone's (old fashioned crank style) ice cream maker. It was a tad icy but i loved it.

I want to make it but all I have here is a Zoku popsicle maker. Do you think I could make the Zoku pops, remove them, then let it thaw a bit, then stir it up and refreeze it? Then tomorrow scoop it like any other sorbet?
