changing the undersink water filter

Here's the unit we have under our sink on the copper line to the fridge ice maker.

The directions say to change it every 6 months, but also that it's good for 2,500 gallons. (We only make ice with it, and we leave the ice maker off often.)

My FIL the licensed plumber (whose experience was in industrial installs and HVAC, not home) told me we only need to flush it.

I'm guessing I change out the whole thing.

Do I just turn off the water to that line, put a bucket under it, and unscrew it with a crescent wrench?

And do I really need to change it every 6 months? It's already been far longer than that. What are the risks of not doing it as soon?
