Microwave wiring to outlet box with no face plate

I am trying to replace a 20 year old microwave that is in a shelf compartment next to the stove. The replacement model I bought will not fit due to the power cord head sticking out too far and pushing the microwave out. I am wondering if I could just remove the faceplate from the outlet box and push the outlet receptacle back into the box. Alternatively can I just directly wire the outlet box wires to the microwave. I realize an option is to get a smaller microwave but the width and height of the current one are perfect.
