Donna, depending on where you live, a major metro area with active recycling programs or near wine country, find out from realtors what features people are looking for in your area. Consider a wine rack versus a refrig also, as long as it is not near a heat generating appliance or in a sunny location. Since we have excellent recycling programs in Oregon, we don't need trash compactors. Lots of fabulous wines in the area and a love of entertaining led us to install an undercounter wine refrigerator, ours is the size of a dishwasher. Temperature control is the most important feature of the refrigerator.

I wonder how sturdy a wine rack can be if located over a fridge. I think the width of the fridge would require extra support and weight of the bottles will make it sag over the years. 4. The only reason I would store alcohol that high is to keep out of reach of children. 5. Storing heavy, breakable items over you head is not safe...

Holiday specific items I only need to climb up to reach a few times each year. The extra plastic containers I rarely use but want to keep for when I do. The few jars I've kept from when I was farming and canning and now only occasionally use. That tall vase of uncommon design that was a gift I only bring out when the long stemmed Iris and Glads bloom. How often do you use that top oven?

Are the measurements of your current refrigerator or of the space? I'd take the space measurements and look online to see what the biggest square foot refrigerator you can fit in there is. With my kitchen it was the height that restricted the size. It may be all you need to do is remove the one overhead. Save the doors on the upper cabinets. If you take out the side cabinets to get in a wider refrigerator, save the doors and drawer fronts so you can find someone to modify your doors and drawer fronts to fit onto narrower pre-made cabinets so the new fridge looks like its always been there. The nice thing with frameless cabinets is that it is easy to get other sized cabinets because you don't have to worry about their finish, just about the door finish. The other option is a second refrigerator in the garage or basement to handle the less used items if a remodel is in your nearer future ( a couple years.)
