Can you post some pictures? I ha a similar dilemma a while back; the Houzz community told me to paint. but our ceiling has a lot of knots with crevices so I just left it as is, hoping it will grow on me.

Post pictures so we can give you advice relative to your home. Based solely on your description it sounds like paint is what you want. You will need to prime with shellac primer then apply a couple coats of good quality latex paint, not a big deal.

Paint is your easiest answer : ) A very good primer, and two coats of paint.

I agree paint is the best answer.

You can install a new layer of t&g over existing and retrim beams for a quality wood look. Don't even think about re-roofing to get what you want.

Unless you love the beams, I would start by just painting them. I think it will change the look quite a bit. ? A light wood tone to blend with the other wood. Other than the blue or is it green or is it black ? beams, I like the look of your ceilings.

I think your ceiling can be really beautiful. I would not drywall over it.

If it were mine, I would paint out everything...the TG, beams and walls in white or off white paint colour (as already suggested)
OR
I would paint the TG and walls white and then wrap the beams in new wood and then stain the beams to match wood floor colour so that the beams were a feature.

Whatever you decide, please show the finished reveal once you complete your project.

If you paint it, it will throw every crack, missing chunk of knot, etc. into high relief. You must fill everything and sand. Then a primer that will block the resin, then paint. I'd leave it as it is; it looks better natural.

Nothing wrong with wood looking like wood and not plastic and perfect.
