I was wanting natural white oak but my cabinet company says it's a bit more money. They do carry beech and maple, can I get a similar look with either of those?I do not want anything that will yellow with age, I prefer cool tones.
Maple looks nothing like oak. I'm not familiar with beech. Look at their sample doors to compare.
All wood changes color with age. White oak, beech, and maple all amber as they age. A laminate material for a slab door is a popular choice. It’s more budget oriented and will remain the same color.

That photo almost reminds me more of red oak than white oak.
You can ask if the cabinet company does any pickled or whitewashed finishes. Quakermaid Cabinetry did our cabinets in the early 1980s. I bought them used from Green Demolitions and sanded and re-stained them and they now look like this:
On the Quakermaid site, they have kitchens in this color in their gallery, but do not name it. I had the stain mixed at Sherwin Williams. They made a slightly peachy shade for me. It did not adhere well to the curved door frames and I missed some mistakes where it simply did not stick. But the kitchen works, even if the 30 doors and 20 drawer fronts are not perfect. You can't tell in these shots, but there is half-inch routing in the plywood center panels for a fine bead board effect. This is 35 year-old oak cabinetry.

Base on your picture I am assuming you are doing a vanity. How much more could it really be to go to white oak?? IF it was a whole kitchen, then maybe a bit more but I bet it's not so much you can't work it into your budget. All woods are different - you can't necessarily find one that will look like another.
Look into quarterswn oak - white as well or some of the veneered cabinet lines - you may find what you are looking for there.
