Undercount white divided sink with faucet needs replacement

I have the typical under mounted divided white sink with faucet on a granite countertop. Should I just get a top mounted sink with faucet holes which is easy to put in or can I get an undermounted and try to cut the granite? Additionally and more importantly, One of our workman said we may not have enough room underneath the sink for the faucet.

First, Would this be a big deal for a plumber to fix? I am afraid of downgrading the kitchen with the over mount sink and also not sure that I like how they look.

Second, are there undercount stainless one bowl sinks with faucet holes?
