Dark emperador marble is brownish with creamy white veining. I have only seen it polished, but the internet says it can be honed too. No idea how it would perform in a kitchen, but it was awesome in a master bath.

Dark emperador marble won't look like "it was salvaged from a 100 year old farmhouse", whether polished or matte. Your two goals are in opposition. Either you want a 100 year old farmhouse look, which would be a wood top and/or a soapstone top, or you want a brown stone with white veining. Decide which is important to you. Or, get soapstone which is black or charcoal with white veining.

Spent some time looking at ideas. Plenty of blackish granite with white veining - with hints of brown here and there. Belvedere and Tropical Storm look like good possibilities.

It’s not brown - it’s more of a charcoal - but you might want to take a look at leathered Virginia Mist (aka Jet Mist). Leathered granite has a soft, very tactile textured surface and has some white veins. Soapstone would look more like something from a hundred year old farmhouse, but leathered Virginia Mist comes close!

If brown , not black is important for you, does the reverse: white with brown veining give you more options??..... it might.

Cygnus is a grey-brown with white and has lots of character. But it's a bit soft and it might etch. I have a sample that I can check for you if you want.
