Food memory - russian coffee cake

I have this memory of this cake. My granny worked in a bakery, it was in an Eastern European neighborhood and when she worked there it was in the depression, but they still made the cake when I was a girl which was the late 60's, early 70's.

They collected all the crumbs from all the pastry trays, and the old pastries and ground them all into crumbs. The crumbs were layered into loaf pans, lasagna-style, with raspberry jam, apricot jam, chocolate frosting, and I think maybe the layers were moistened with brandy or kirsch. The top layer was chocolate frosting. It was my favorite and they only ever had it if they had enough stale pastry to make it. I have never seen it again.

Has anyone ever seen anything like this?

I had a loaf of bread that didnt come out right and was going to try the cake, but DH ate the bad loaf of bread today with peanut butter so now I have to wait to have too much bread or stale cake again..
That may not happen for years, so my memory stays a memory.
