You probably need to add a picture so we can see what you actually did. Either way I would advise to leave your plants alone and do not remove any more grow. They will continue to grow and you can prune in the future as needed.

Take a deep breath. Now, keep the plant watered as you should and leave it alone. There is no such thing as "one must NEVER prune main canes". Eventually, nearly every main cane on most climbers will need to be removed to either stimulate the growth of new ones or to make room for the new ones crowding in. The existing canes have stored nutrients in them, so leaving them alone will allow the plant to make use of those nutrients as it produces new growth. Some of that new growth may be able to be trained in to replace the main canes you pruned off. If it can be, great. If not, the world won't end and you haven't lost the war for the Allies. Tie in and train the new growth where and how you desire it and let it grow. By the new year, you very likely won't even think anything was done "wrong". If you want to untie them from their supports and start all over, unless you live where it's early spring type weather and the roses are just beginning their annual growth, I'd wait until the time of the year you would normally do the annual prune. If NOW is that time where you are, and you want to do that, go for it. Just remember, you think you've "butchered" them, but if they were budded bare roots, that is precisely what was done to and with them to make them the plants which were purchased and planted. You haven't killed nor ruined anything. Let them show you what they want you to do. If you watch, they will. Have fun!
