Chefs kitchen appliances: fridge, stove top and range hood

Hello there!

I'm looking for the following and was hoping to get some feedback and or recommendations on new appliances for a chef's kitchen.

Kitchen refrigerator: 48" Sub Zero Pro with Glass Door or 48" Viking 5 Series ? I like the "heavy duty" look of the Subzero and the glass portion. Does anyone have this model, does the glass fog up often? Easy to clean? Comments on the Viking? We currently have an older 36" Viking model and have no complaints.






48 inch Viking VRT5486GSS gas range top with 6 burners plus griddle. How often do you use the griddle? Is it worth it? I imagine the griddle produces more of a mess.




60" Recano Island Futuro range hood or the 60" Silvana. Our contractor recommends going larger than the 48" stove for better performance. The Recano is more of a statement piece because of the design and shelf but it can only be ductless which means the air will be filtered back into the kitchen. The Silvana is more of a classic/simple design. The Recano comes with the "Micro Carbon Infusion Filter" which I read is just as efficient as a ducted application. Could the 60" non-ducted Recano hood work well with the 48" Viking gas range-top and griddle?

    I will not believe that until I see good neutral third party evidence. I have never seen an effective ductless system. You can certainly argue that a ductless system may be sufficient for many types of cooking on electric ranges, but I remain suspicious of any claims of sufficiency for any type of cooking on gas cooktops.

    Unless you and everyone in your household is committed to keeping the inside of the fridge in pristine condition, I could never understand the appeal of the glass door refrigerators.

    The illustrated hood is not even pseudo pro in design. It might suffice for low temperature cooking on an induction cooktop. Read up on hood requirements here (many threads) and then find an aesthetically tolerable hood that meets the requirements. Then consider the make-up air system that will be required by reading those relevant threads.

    From what I understand, Viking used to make great appliances a long time ago. Is there a reason you don't want to keep your old refrigerator? The Subzero is beautiful if price is no object and if you are very fastidious, but I would keep the Viking if it is in good condition.


    Pairing a ductless ventilation unit with a 48" gas range is actually dangerous. There is a reason these vents are pictured with induction cooktops. Why do you need a ductless vent hood? Is it simply aesthetics? If so, I would recommend swapping the range top for a large induction cooktop. Especially if you aren't an experienced cook (the range top-ventilation paring you proposed is a big clue), you'll be happier with the ease of use of an induction cooktop. Plus, they look really sleek if you get them built into the counter if it's a specific look you are coveting.

    @jabaz Our current Viking is too small for the new configuration and after reading up many discussions here we will not be going with another Viking. The appliance company is getting us a good deal on the Sub-Zero fridge, glass door with very minor exterior scuff. Will be ordering the Futuro Silvana hood. I still love the appearance of the Recano too bad its not duct-able. Never was a fan of induction cooktop.

    Yes, the style and look of my kitchen is important for me so I'm trying to find a sweet middle. Now I'm thinking about a built-in coffee machine, Bosch maybe. Still reviewing.

    Get a real hood, with some actual capability. You will also need a substantial make up air system.

    Do some demoing on a Miele or Bosch induction cooktop. You should take the time to learn its capabilities.
