Overwintering stewartia pseudocamellia cuttings

For those who know this tree probably is aware that overwintering cuttings of these plants have proven to be difficult. So I read from a research article that overwintering survival rates were much higher at constant 40 F temperatures. So can’t you just leave them in your fridge then? Since they are dormant they wouldn’t need any light. It makes sense logically but I feel like I’m missing something as if this was the easy solution every grower would be doing this..
