Cafe 36" all gas range w/ 6 burners, hood size and CFM recommendations

Hello, I purchased a 36" all gas range by Cafe. Each burner is 18,000 BTU. I'm overwhelmed with the hood decision. My appliance store is recommending two hoods: both stainless steel wall mount chimney hoods that are 42" wide and a max of 1200CFM. I will not be using all six burners, probably more like 1 or 2 burners at a time. The contractor was planning on running the duct across my kitchen ceiling to the other side and then out of the roof (roughly 16'-18'). Therefore there will be turns and some distance to get it vented to the outside. (I have 8' ceilings.)

The two hoods I am looking at are:

1 - Elica Leone ELN142S2

Leone Series Extra Depth Wall Mount Range Hood with Hush Quiet Operation, 4-Speed Internal Blower, Heat Guard, and Dishwasher-Safe Baffle Filters: 42" Stainless Steel (1200 CFM)

2 - Zephyr Essentials Europa ZSPE42BS

42 Inch Wall Mount Chimney Pro Range Hood with ICON Touch™, Airflow Control Technology™, 1200 CFM Internal Blower, 5 Speed Levels and Dual-Level Brite Strip LED

My questions:

1 - Anyone have experience with either of these hoods? Pros/ cons? (The prices are similiar.)

2 - On the Elica, the depth is 24", on the Zephyr the depth is 21". The range is 30" deep. Which depth for the hood is better, 21" or 24"?

3 - I'm assuming that I absolutely need to get makeup air kit, even though I will use the lowest setting the most often (300-400CFM).

Appreciate your help!
