Homemade pasta. Which flour? Also, have you ever used a tagine?

I am giving a cooking themed gift to my dh. One item will be a homemade pasta maker. What is the best type of flour to use when making homemade pasta? Is any particular brand superior to another for this purpose? I would like to include a couple of bags with the gift.

I am also giving a tagine. Have you ever used one? Are there any types of food that work better in a tagine than a crockpot or sous vide?
