What should I be asking a GC for on a large Reno project?

We are about to embark on a large renovation project using a GC that has not only built tract homes but also custom homes in our area. We’ve visited both to look at the quality of his work, talked to his references and are comfortable we’ve picked the right guy from looking at his work and his references. What questions should we be asking, what should be in the contract, and is it unrealistic to ask for the projects to be broken out and priced separately (in the event we need to eliminate something due to budget restraints). We are planning a new kitchen, demo a large wood burning stone fireplace, then rebuild it with new stone/convert to gas, replace carpeting with wood in 3 bedrooms & stairs that matches wood already in the home, relocate laundry, replace all plumbing fixtures & lighting fixtures, replace 15+ sliding windows with casement windows, and fix/retexture/repaint all of the drywall that’s damaged from all this work. I may have much of the interior repainted while we’re at it. Your advise is much appreciated!
