Baking cakes in convection oven

Hello, we recently moved to our 1st home that came with a KitchenAid convection wall oven. I bake a lot and tried baking cakes and other desserts. As recommended I have lowered the temperature by 25 degree F than what the recipe calls for and cakes remained undone inside, taking longer to bake. Final result was stiff & dense cake, very undesirable for a sponge cake. I am looking for suggestion on how to get a proper fluffy cake in a convection oven. Otherwise please suggest alternate countertop oven options for baking cakes or similar delicacies. Thank you.
