Help, don’t know what to do with this wall

We are having our kitchen completely remodeled which will have a.large open area with a large island looking toward this wall. My contractor suggested removing the fireplace completely since we don’t use it and remove all the shelving. I am fine with that but at a loss of what would I do with this? Any suggestions, help? Since we are spending lots on the kitchen trying to keep the costs down if possible!
