installing cortec LVP (calypso oak) on stairs with a flush stair nose

I am installing cortec LVP (calypso oak) all throughout my home and I am having issues with the stairs. My existing stairs have a bullnose and the flush stair nose does not fit over the bullnose (see photo). If the bullnose is cut off my stairs will not meet code and will be about 1.5” shorter. I don’t want this. My installer said the rip a piece of LVP to cover the exposed strip of the existing bullnose (see photo). Has anyone had this done and pleased with outcome? I also have the option to install a stair tread, but they feel slippery to me and I won’t be able to use them on the stairs that go down to a sunken living room on main floor. I want consistency throughout my house on the stairs. Feeling very confused!!
