Favorite Gazpacho or Non-Dairy Blended Vegetable Soup

I am preparing for the healing phase after some pending dental surgery. I am thinking gazpacho or smooth soups will give me a break from the primarily carb-heavy soft foods. Shouldn't be too acidic.. and I can't do cream, milk, yogurt or sour cream based soups.

I am looking at this highly rated, simple and classic Gazpacho recipe-- but open to others, especially if they are less acidic.

Funky, I cant find a recipe right now, but you might be able to use this photo of the ingredients of my (former) cafe’s yellow tomato gazpacho as a guide.

tomatoes, grapes, sweet peppers, scallion, basil, cilantro, garlic, jalapeño, vinegar, and olive oil. Blend until smooth enough to suit you. The grapes aren’t identifiable by flavor but lessen the overall acidity in a lovely way.

The actual recipe is in a database that I can’t access right now but this was always popular, and you seem like a comfortable cook who might wing it.

No great help on soups, unless you have any interest in a cold berry dessert soup, in which case, have I got a great recipe for you. I don't put much sugar in it myself, and the heavy cream on top is optional.

I don’t have a recipe handy, but I love gazpacho, and my absolute favorite is watermelon gazpacho. I first had it about 20 years ago at a restaurant named Merriman’s on the Big Island; it was memorable. Also, I’m wondering if tomato gazpacho might be a little irritating after oral surgery…

I love gazpacho but I can't have raw garlic as I will have no friends. Seriously. I'll breathe garlic for days. But I think the flavor is important. What would you do?

I don't know that anything is quite like garlic.. does roasted garlic linger on you the same as raw? I use shallots for a milder option for onion. I don't think it's a stand in for garlic, but it would be worth a try.

If you want to be a tiny tinny bit naughty, Campbells cream of broccoli soup has almost no cream, less than 2%. When my son comes I thin it out with Almond coconut milk and add vegetables (and a small amount of sausage) but you could skip that. It's quick and satisfying.

Funky, are you able to have anything that's not pureed, I have several delicious soups but they are chunky. I think I'm going to try the shallots. Thank you!

Thanks @Bumblebeez SC Zone 7. I would expect i could have something not pureed after a week or so. Please do share -- I can always use a stick blender! I am just looking for healthy options beyond the typical soft foods (i.e mushy carbs and scrambled eggs).

I am hoping that I can make fresh steamed vegetables steamed beyond al dente work after the first few days. We'll see.

I watched Ina's video making gazpacho. She presciently said it's not "gestapo."

Thank you all-- Ina's recipe looks great. I like that the proportions have more cucumber and pepper. I am also intrigued by the inclusion of grapes in your cafe's recipe, Lisaam. I DO need to be mindful of acidity but I think i can make it work, chinacat. I did have tomato soup after the earlier surgeries without issue.

Zalco, Localeater and Spanish, those look all look good too. I have never heard of a beetroot soup but I love Mollie Katzen recipes and I remember loving the idea of the pea mint soup when you shared it a month or so ago (maybe when Mtn was looking for a recipe?).

I can eat very soft pasta and i am going to try a broccoli pesto sauce which should at least get some nutrients and fiber into my system. I can also eat oatmeal and scrambled eggs. One of the easiest things to eat is pancakes of all things-- not something i normally eat but i do have a whole wheat pancake mix which should also give me some fiber. Ive been through this twice before so I know I will manage well enough-- just hoping to stay on track with healthier eating at the same time. I will increase my carbs but if i can pair them with healthy items like blended fruit and veggies, I am hoping to still stay on a good path.

Since you can eat scrambled eggs, I assume you can eat tofu. Miso broth with cubes of tofu would be easy and healthful. Dont forget about a smple baked sweet potato.

    Funkyart thanked localeater

Oh yes-- baked potato and baked sweet potato both work after a few days. I just need to load them up with butter or something to make them extra soft and fluffy. I do love sweet potatoes with cayenne!

I know there are many kinds of tofu but my limited experience is that it needs to be "bitten" or "chewed" even though soft.. is that not true? scrambled eggs just kind of fall apart.

    Thanks, Localeater!

I like my sweet potatoes with Everything Bagel spice.

RE tofu, it comes in different firmnesses and often is pressed to extract more liquid and get even firmer. It is also firmer and more meatlike if it has been frozen. I was thinking of soft or silken tofu, which has a custardy texture.

I cook 1/4 cup of yellow split peas with 1/4 cup of red lentils. Yellow split peas are difficult to find, you can use all red lentils or less red lentils. When it is all very soft and cooked through, I blend it with the stick blender. Meanwhile, I add about a cup of roasted squash or sweet potato, some roasted onion if you like and a 14.5 oz can of sliced carrots and blend it all together. Add chicken broth or veg. broth if it's too thick. I season with garlic, onion powder if I don't add any onion, and curry powder to taste. Can add garam masala and cayenne pepper to taste, and a dab of coconut milk. I like it fairly spicy. Very nutritious. I wouldn't eat it cold though. You can omit the lentils if you don't like them, but they are very bland, they add protein not much taste after it's all spiced up.

Nowdays I would also add some chopped spinach because I have to eat more greens . . .

Thanks, Pink.. believe it or not, neither split pea or lentil soups worked well for me after my previous surgeries. I had stocked up on ingredients for both and had to bail-- perhaps i could try again and blend them further so that they would work better. An excuse to get the vitamix I have been wanting for the last 6 mos!

I'm so sorry that you'll be going through dental surgery.

This is a gazpacho I've enjoyed.

    https://www.loveandlemons.com/gazpacho-recipe/

This is a warm soup, but it's a very easy creamy tomato soup without cream or milk. The butter in the recipe can be subbed for olive oil. It gets the creaminess from canned white beans.

I have not yet tried this one, but I've been wanting too. Similarly there's a sub for butter (cashews) and no milk or cream.

Just so happened that both my daughters had all their wisdom teeth pulled within a couple of days of each other. It was right around the time that all of our neighbours had plethoras of zucchini that they were trying to give away. I made a couple of batches of this zucchini soup for them. Thank you, Nekotish! I was looking specifically for a zucchini soup recipe-- this is exactly what I was looking for and did not find in a series of sporadic searches. I should have added "Dairy-free".

I am really set to at least get through the first week. Thank you ALL! 💗🥦🥒🥕

You can leave out the split peas or lentils and just do squash and carrot. I only add the split peas or red lentils for protein. Otherwise it is just curried squash soup, which I love. You can also make this with a dab of the red Thai seasoning paste that they sell in the stores instead of curry powder. To taste, they make I think both a hot and mild version. I think maybe "Spice Islands" sells a powdered Thai seasoning . . .

@l pinkmountain your lentil soup suggestion sounds yummy.

I love this red and yellow lentil soup. I generally don't blend it because I like the texture of the yellow lentils, but it could absolutey be blended smooth. It would be very filling if you needed something with some protein and bulk.

Funkyart, I'm not sure what you can do with a stick or regular blender. I have a Vitamix that will make steak into baby food and no longer use my regular blender. I have a recipe for a delicious Kale and White Bean Soup that has kielbasa sausage(can be omitted or picked out) and a rind of parmesan. Also the old "Weight Watchers Zero point Cabbage Soup" is delicious, low calorie and IIRC filling, although not high in protein. You can pull it up online. You've gotten lots of great ideas/recipes. Hope you recover quickly with the least amount of discomfort.

I hope you are planning to blend the gazpacho! Mine is soo chalk full of fresh garden peppers and onions as well as diced tomatoes there's plenty of chewing involved. My recipe begins with V8 and includes cilantro to the above recipes. Summer cucumber soups are smooth and tasty. Many include yogurt so not sure if that will work for you.

Thank you for the suggestions! Yes, I will blend the gazpacho-- at other times I would enjoy it chunky but i will need it to be smoothish for the near future. And sorry, no yogurt-- though depending on the recipe, i could just skip it.

There have been so many ideas here-- I am surely set. I will likely lean towards the most simple just because I won't be up to much. I am very seriously considering getting a vitamix to assist with easy, simple, healthy options. I have been considering it for many months now-- but balked at the price. Truth is the cost is a drop in the bucket of the cost of the whole process-- and in a few years, I will need the same bone grafts on my bottom jaw bone. I think it's a good investment. I just need to find the time to select a model/price shop.

Many thanks to you all--- especially for the well wishes. This surgery is the least of the previous 2. I will be fine and the recovery should be pretty easy. I just want to keep foods fresh and healthy.

Honestly, my Vitamix blender is my favorite kitchen appliance. I use it all the time for soups and sauces. Even if I'm making a chunky soup like chili or black bean soup, I'll blend a little bit of soup to put back in to thicken the base. I love how easy it is to clean as well.

    Funkyart thanked pricklypearcactus

Thanks Prickly-- I can be ridiculously stingy on some purchases and extravagant with others. I guess one makes room for the other! I have no doubt I will love the vitamix-- just not sure I will use it often enough to justify $500+
