That's the generic advice. What I'd recommend in taping off the table area on the floor and then putting chairs around it. You'll instantly know if you'll have enough space.

If you are measuring right up to the buffet, the 11' would encroach on your walkway in and out of the kitchen. Same thing with the bar, unless you've allowed space behind the stools to push them back. And as you have already noted, opening the door(s) will also require room. You might be better off looking at 48" round or an oval or rectangle. Mark a simple length and width on the floor with painters tape to get the feel of a table - it will give you a good idea of sizes to look at. Then allow for chairs and other variables.

So open the french doors and put a big X on the floor with blue painter’s tape, with each line of the X being 60”. The center of the X should be under the light fixture (for now — you can always re-dangle a pendant somewhere else)

Do you need such a deep buffet and a mirror on that wall? This is 14” deep

You might try taping off the area where the table might be, and then making sure you have room for the chairs to be pulled out as well.
