Quartzite countertop for kitchen (help me pick!)

I found two types of quartzite. They’re both beautiful.

My kitchen will be a bit more “traditional/transitional” with BM Simply white cabinets, antique brass hardware, panel finish fridge and dishwasher. Floors are sealed with a natural sealer so they look as close to raw white oak as possible. Island will also be natural white oak.

Here’s my dilemma.

Option 1 Mykonos. A lot of movement and variations in the stone. Will all this movement go out of style? It’s definitely warm, but the veining is a bit darker.

Option 2 Chamonix. It’s also warm, and a little calmer/softer. The photo makes it look gray but it’s not very gray, more taupe.

Thoughts?
