The Cercis post got me thinking, not cloned cultivar but what species of trees do you find to be predictable and unpredictable in your areas?
For me Metasequoia and especially Taxodium are very predictable.
Both of these I like but growth form of Cercis seem all over the place as are Catalpa speciosa.
