For chandeliers, 36" is the max height above the table. However, with a Fortuny, you have the tassel and the issue of someone tall being to look down and see the inside of it from above. Hang it so the majority of the fixture is at eye level for the tallest person in your household, unless you are all short. Keep in mind you don't want the tassel in the food or centerpiece - which you probably won't need since the Fortuny will grab all the attention.

The rule is 30 inches above the table for an 8 ft ceiling. You should raise the chandelier by 3 inches for every extra ft. This means in your case, the chandelier should be 42 in. above the table.

At the window, at the ceiling, or split the difference and put in the middle. Love the illustration. On an aside you chandelier looks too high for the room but it might just be the the pic. Rule for hanging chandelier is in an 8 foot room, chandelier bottom should be 30 inches above the table. For every one foot addition to wall height, add three inches higher. So 9 foot ceiling would be 33 inches above table, 10 foot ceiling 36 inches, just keep adding three inches each foot you go up.

The rule of thumb when hanging lighting over tables or counter tops is 30" - 36" from the top of the surface to the bottom of the light. However, if you have ample lighting outside of the pendants (task lighting, recessed lighting, etc...) I would cheat that up a bit (to 36" - 42") depending on the ceiling height since your faucets are so tall. I would love to see a picture, I am intrigued by the sink faucet combo :) Good Luck!
