Classic quartz countertops for white and blue kitchens

I need five houses for all of the quartz countertops I've chosen. Since that's not happening, I'm hoping to get some recommendations of samples to look at this weekend. I'll post a picture of our current kitchen and the layout rendering. It's a fairly small kitchen, as you'll see. Since we only have about 18" from the countertop to the bottom of the cabinets, I'm not sure that some of the quartz I like will look great if we use the same material for a backsplash, as well. Some might need a larger space to look their best, if that makes sense. Plus, it's probably cost prohibitive but I'll appease my husband and consider that option.
We want a classic look to go with white and blue cabinets and a smallish island. We're debating a simple vs. busy pattern, so we'll consider all suggestions. We're replacing the fridge with a stainless one to complement our other stainless appliances. We're eventually going to switch out the dark flooring for a much lighter tone LVP.

Get more drawers. My only cabinets are sink and a narrow one for cookie sheets and trays.

What are you using that 2-drawer stack for? Most things fit in 3-drawer stacks and 4-drawers stacks.

I would do a simple counter, not a basic speckled one and not one with large wavy veins.

I love Cambria Montgomery. Beautiful blue, gray and taupe tones. I would not use any quartz as a backsplash and few (if any?) are warranted for installation behind the cooktop. However, Montgomery slabs, like almost all Cambria slabs, do vary greatly and you must be able to chose your slab and see the templating.

MizLizzie, thank you for your recommendation. I'll look at Cambria Montgomery. If you were going to recommend a white quartz with veining or waves, which one do you think would look best for the countertops? That's something we're considering but we can't decide what we like since there are so many.

Thanks for the feedback on not using quartz for the backsplash. I've seen it online a lot but not in person (well, except for kitchen showrooms). We're also considering white undulated tile.

Last, we've never been to a slab yard before, so we're not sure what to expect. Could you please explain the process?

Chispa, thanks for your thoughts. We like the look of cabinets in addition to a bank of 2 and/or 3 drawers. We think we're going to have at least one of them hold roll out drawers. The drawers and cabinets will hold a variety of things - pots and pans, storage ware, dog stuff, roll out trash bins, etc. Basic kitchen stuff...

Do you have a specific non-speckled countertop that you'd recommend?

For reference, here are the cabinet color choices we've made: white icing and Gale (see red dots in 2nd photo). MizLizzy, on my phone, it looks like the Montgomery has a lot of green but I don't see as much blue. You think it will coordinate with the Gale blue? Montgomery is beautiful. Our wall color is Stonington Gray from Benjamin Moore.
