I think it will not go with the floor and countertops

Why are you ‘concerned’ there are hundreds of cabinet colors available- bring home samples and see them with your floors.

My cabinet guy recommends the white oak. non-one has shown me a stain that isnt light or orange .

if the layout works you could get the uppers done in white. You have base drawers and the layout seems okay unless there is something major you wish to change... consider new doors for the uppers in paint ready and the arches could be changed as well.

i did get a white oak sample that is about 6 months old and it has softened in color as oak does. it takes about six months to deepen, depending how much light it gets.

There is nothing "wrong" with what you have! It goes perfectly with the floors, and rest of the house. Why are you wanting to change anything? There are smaller changes that can satisfy that itch without spending 85K to do an all new kitchen. Reduce the island to a single level and paint it a nice green. Get lighter creamy counters, and add a whole lot more lighting. Including under cabinet lighting Fix the area around the fridge with panels, and get the MW over there for a nice snake center out of the work zone. Etc.
