Or maybe they only cook on the front burners. But whenever I see architecture that has stairs with no railings and elevated spaces with no railings, or kitchens and baths that seem a little dangerous, it's always Europe.

(I once saw an apartment with an oven accessed from a step ladder, I wish I have saved the picture. I can't imagine using it.)

The European cooking I’m familiar with doesn’t involve much high heat stovetop cookery. Still, it’s hard to imagine that wood won’t get discolored and degraded. Are we sure it’s a actual working kitchen rather than a showpiece or whatever?

It's in someone's house so I am assuming it gets at least minimal use.
