When you don’t know the words Hum…mus

I have posted my tahini tutorial now here’s my primary use for it. Hummus is so good and so good for you.

There are a couple secrets to perfect hummus. 1) pop off the skins from canned garbanzos. I know canned … but truly it is one of those things that’s better if you buy a great brand. 2) save the Aqua Faba ( juice) and set in the freezer to chill 3) fresh zested lemons and lemon juice - put the lemon juice in the freezer too. 4) NO garlic ever. It masks the flavors of the tahini and beans and becomes a garlic forward dip.

Whip the homemade tahini with the lemon juice and add a couple TB of the AF. It should look like white whipped cream. Scrape as needed and keep blending . ( my log in is back 🤷)



When it is perfect add the beans and blend/ scrape. Add EVOO and spices. Scrape and blend til smooth.
