Need help with countertop/backsplash decision

Pls see attached photo. The stove is being replaced by a white slide-in model. We are considering replacing existing countertops with a light Colonial Gold granite. See samples on open drawer. What backsplash treatment would you recommend? I like the idea of wall-color subway tiles; Hubby fears it would look too-much like the men's room. Help!
