If you are happy with wireless, then any of them will work provided they are installed correctly. Why not cat6a or fiber optics? Cat5 is out mostly because the cost difference to Cat5e is not significant and Cat5e capabilities are still far greater than what is used in most residential applications. Cat6 is more for commercial use where several cables are bundled together in a cable tray.(just don't bundle it) To get the advertised speeds from Cat6, the cable has to be fairly short, otherwise it isn't much better than Cat5e. Installation is the key to a good system. Don't run the cable near other wires or cables (even other Cat5 cables) and don't bend them to less than a 6" radius. All the connections need to be perfect. The more connections you have the more speed you loose. This is more important than the type of cable. Any future need for Cat6, other than bragging rights, will most likely be necessary to know the exact use and run it accordingly. As a prewired component of a house, Cat6 would end up with too many splices at the wall jack, panel board, router, etc., each with their own flaws to be of much use. If you need real speed in the future, you will be much better off hooking up different components such as a computer to a printer with a direct Cat5e cable than to a whole house system wired with Cat6. Better yet, a direct Cat6 cable.
