Having done two major kitchen remodels, the one thing that popped into my mind that no one mentioned was staring at a wall while working at the sink. I'd have moved the sink into the island and the cooktop/hob onto the perimeter wall. Our last kitchen had a built-in downdraft in the cooktop and we made sure our current kitchen had an exhaust fan vented to outside. I cook a lot but don't want to smell last night's dinner when i get up in the morning.

I haven't had a hood for years, and it's really not a problem. Would I prefer to have a hood? Sure, but it's not a disaster without one.

The kitchen above reminds me of the deVol Kitchens of England - even the shaker style looks the same as well as the cabinets. Beautiful kitchens. Wish they had a division in the US.
