Last year at this time, I had more zucchini than I thought possible, and I couldn't make one more loaf of zucchini bread (although the recipe with the blueberries was delicious). But I've since discovered zucchini soup!

Saute 2lb roughly chopped zucchini in oil with 2 cloves garlic, salt, pepper, and 1/2 - 1 teaspoon of powdered ginger. Add 2-4 cups broth (depending how thick you like it). Simmer for a while (anywhere from 30 minutes to an hour and a half), then blend it up with an immersion blender. Sometimes I add onions, sometimes mushrooms or grilled chicken, or even shredded pork.

This recipe is so good (and so versatile), you might wish you'd planted more zucchini!
