Unless it's a very small island, 2 matching fixtures is always better. Three is pretensions and 1 always looks a little lost. Moreover, 3 would shed too much light, so unless you're doing surgery on the island, take it down a notch.

The average island (like this) can accommodate 1 large or 2 small-medium fixtures. You want to complement, not overwhelm. Happy remodeling
