You have a total height to play with of 96 inches minus 72 inches. This math equals a total that MUST include stem or chain/ and the inches of the mounting attachment within the 24/26 inches. That is all you have to work with..That is because of the counter height of 36, and the bottom of the light hang distance TO that counter of 36 inches and certainly not less than 34 inches unless you are into head banging for tall folks
I would look for a fixture with chain, or you will need an electrician with a threader to convert a stemmed fixture as you will find almost all will be too long. and designer for nine/ten foot ceilings. You must also check if it CAN be retro fitted on site, or customized at factory. Check the spec drawing for anything you consider, it will give you every dimension. If you want see approx six inches of chain? Or stem? You want a fixture no more than about 16 inches in height. leaving 8 to 10 inches for the "rest".
Two is plenty .........especially if something like below. !4 tall, and 10 wide
