We remodeled our 1965 ranch kitchen earlier this year. Nothing could be saved from the original galley kitchen and we chose to remove the wall where the stove and refrigerator were, create an island and open up the space to our family room. We also removed the two original tiny 1965 kitchen windows and replaced them with a large 8" window and added two skylights. We love the results and our kitchen is so much easier to clean and to use for entertaining!
