Thanks! I assumed "larder" had something to do with animal fat (i.e., lard), and the bit about food preservation makes sense as after all the French have their confits (which I myself would like to try doing). I've always coveted a walk-in pantry which our forever-house will have, and I did consider including a sink to make it a kind of scullery as well; but the two sinks in the kitchen itself (plus one in the laundry room) should suffice.

@detailaddict: I think the kitchen annex will continue to be popular in larger homes, whether it's called a pantry or butler's pantry or entertainment 2nd kitchen or what ever. It will continue to be mostly a combination of both the original Larder and Scullery. Moderate homes will generally have a walk-in pantry that houses the foods that are non-refrigerated, bulk items, storage for small appliances and extra entertainment dishes along with larger pots and items not used frequently.

If a moderate to large house is built with a panty galley, sometimes folks add in a small serving bar, too. It all depends on allowable space. Those of us like me who have small homes (under 2000 sq ft), the annex disappears and in its place are things like cupboards and specialty pantry cabinets/closets to house the dry goods and bulk containers as well as the dishes (sometimes on display). Of course, there are a whole lot less items to store, too. :)

Yes, cooking by confit is another form of fat preservation for meats - mostly wild duck or bird but also applies to pig meat. Then add in the drying and salting of meats - called the smokers in England or smokehouse in No. America. The building (usually small and behind the house), preserved meats by using smoke. The building was also used to store the preserved smoked meats, too. Smoking meats have been traced back to primitive human existence and is probably the first known process of preservation of meats once fire was discovered. Use of salt brine came later on in the preservation (curing) methods developed over the history of humans.
