Before our kitchen was gutted, we set up a temporary kitchen which included only the following: card table, small microwave, small dorm frig and coffee maker. It taught us we really could live small (like typical European kitchens). No, we didn't eat out more than usual.

After our kitchen was remodeled, all things cooking HAD to fit in the new kitchen (i.e., no more storing large items in basement storage or garage shelves). Not-for-profits loved the catering sized coffee urn, electric oven, chafing dish, etc. It was great practice for future downsizing.

We did a large scale project and since contractors were in and out all day, the doors were often left open for periods of time. I suggest prior to your renovation, you set some mouse traps in your house to deal with any mice that will most certainly find a way in. We had to deal with this issue late in the process and it was more of a challenge that if we had been prepared.
