In an effort to be green, I reused our old kitchen cabinets which are oak and blended in new ecru colored cabinets and topped it all of with Silestone. I don't consider the use of granite as shown in your feature "green".

We made a kitchen counter top from a deep dark blue Slate ... found in an old pool table!

I have also questioned the eco-friendliness of quarried stone, but in my research I've found that countertops made of synthetic or composite materials take more energy and/or water to produce and can contain toxic chemicals. They also are not as durable as stone and will likely end up in a landfill when their usefulness is ended. Stone requires no processing, and many quarries adhere to a set of environmental standards including recycling of water and minimizing waste. Stone also lasts forever and can be repurposed or upcycled. As I live in the U.S. I've searched for a stone that is quarried here rather than Brazil, India or Portugal, and I would also consider reclaimed or "remnant" slabs. As with many choices there are tradeoffs, which means that there is no one "best" solution.
