I find a large double sink unbeatable, we have a dishwasher but there are certain dishes or pots and my good dinner sets and glasses that cannot be put into a dishwasher, hence the use of the double sink, 1 side to wash and the other side to rinse and then air-dry on a rack, I would never be without a double. If ever I built again there would also be a separate sink in my island for prepping and rinsing veges and fruit, another want would be to have a water spout/tap at the back or side of my stove to fill up anything needing extra water while cooking without having to fetch the water from the kitchen sink and taking it to the stove or carrying a hot pot to the sink to fill up, extravagant I know but well worth the extra cost.

Louise Newport, in our house, that would be several trips!
I see your point but we have 5 children 2 adults at a bare minimum. So heavy lifting with stock pots etc, definitely a good idea to add a tap alongside the cooktop for us!
However we put our large double sink with large drainer along the same bench top as the cooktop. So not too far to carry the heavy stuff, with the kettle at the other end. I suppose definitely work to your circumstances and budget. We are a big family in construction so some things are easier to add in without too much added expense.
