Installers are probably very much aware of how flooring reacts in local areas over time. Question them as to type of engineer flooring as to vapor, plywoods, fiberboards, glued laminated timber, particleboards, type of veneer and how installed. Adhesives used will also make a difference. You might ask your neighbors, too - the ones who may have engineered wood. It also will depend on the type of veneer layer you want, too. Cheaper wood veneer will warp in humidity. Also depends on the plywood grade, vapor protection from subfloor as well as your home leaking humidity. Understand how engineered wood is built. IOW do your homework first before asking questions. Once you know how engineered wood is built, then check with your preferred manufacturers and specific brand/type.

That said, my bro who lives on the gulf coast of TX but about 3 miles from the Gulf has engineered wood. I don't know what grade he selected nor brand but knowing him, he would go to top of the line with a very hard wood according to Janka Scale in comparison with what he wanted. I think he ended up with a white oak veneer. Anyway, he's had it for 2 plus years and it looks like new. Of course, he lives there 24/7 and he doesn't change the temps of his place like you do.
