**Q: white quartz countertops....turmeric staining.** *(in Building a Home)*

Hello everyone. Ready for some sage advice and tips right about now. Nearing the end of our new build (ha, right!) and at the point of choosing countertops. Kitchen is in, appliances coming in soon, trim is being put up, etc. My designer and I, when we had been choosing tile for the bathrooms had fallen in love with a countertop they had at Ciot, and had decided to go with that countertop material almost six months ago. We planned everything around it, the colors of the cabinets, the look and flow of the kitchen, etc. Well this week the fabricator that’s doing our counters came out and we showed him the counters we had planned on, he took his keys out, and scratched up that counter material pretty quick. Advised strongly against it, and mentioned others who had problems with it. Which of course is great to know before spending the $$ on it, but not exactly great cuz most things were planned around it. 

So now we are back to square one of choosing counters. Went to several suppliers in the last three days, picked up plenty of samples of quartz that went well with the white of the cabinets and look of the room. My ethnicity is Indian, and I use a lot of turmeric in my food. So I decided to do a turmeric test not just cuz it’s a highly staining spice, but because I use it practically every other day so it’s a reality of what goes on in my kitchen. Stained all my final quartz samples/contenders, left it for five minutes, and it came off only with an SOS hard sponge thing. Left it on again for about thirty minutes and I’m not able to get the stains off. Tried the SOS sponge, tried Magic Marker, tried an Oxy Clean paste. There’s still a faint yellow color.  

So now...is there seriously any white quartz countertop that can hold up to a turmeric stain? This is going to affect my entire kitchen design!!! 

I’ve read several other threads on this...and it seems that Silestone white might be a quartz that can handle turmeric stains? Any other choices/advice of what has worked for people?

A: I've done testing on a some of the samples in our showroom. Ground a piece of turmeric into a bunch of different quartz and Neolith slabs, and then let the stains sit over a weekend. 

Most of the Neolith didn't take the stain, except maybe the riverwashed Strata Argentum. Most came off with water, the others came off with soapy water.

Most of the quartz (I had some honed pieces too) stained. It lightened when washed with water and soapy water, though still had stain. But it came out with bleach. 

Surprisingly, beet juice didn't stick on anything. Comes right off with water.

**Q: The latest DCS 30" gas range owners. Please reply.** *(in Appliances)*

We are looking at getting DCS 30&quot; RGV-2-304-N (4 burners) gas model ($1000 off right now). I have been searching for review here and on the web and people have been having issues with the cooling fan and broiler in the past. There are a few very bad reviews on Amazon. The brand has been purchased several times in the past. I wonder what is your experience if you have purchased this or similar model lately. Do you have any issues? How do you like it?
I was hopping to have a reliable range for many years, but if going into high end market doesn't  make fault proof and getting parts is going to be an issues, wouldn't be better to get something from high end of consumer market, for example, Samsung Flex Duo NX58K9850SS model? The budget is ~$3000.

A: My customers haven't experienced parts being particularly difficult to get, but then again, we're based in NYC and generally have good service coverage. YMMV.
I would take the Amazon reviews in conjunction with other reviews, because in my experience, a lot of the Amazon reviews are reviewed on the wrong models, simply because they reviewer can't find the model that they actually have or can't be bothered to look it up. This is particularly true with appliances, since they very likely didn't buy it from Amazon. Certainly, there are no Amazon reviews of the current generation of DCS ranges.

\*\*Please note, the comments about the silvery maintop are no longer relevant as that has been changed to standard SS. Ironically, I have also seen reviews online at somepoint saying they felt that silvery surface was difficult to clean, though that thread is glowing about it. So, take everything with a grain of salt :)
I like DCS as a company, and my experience cooking with them during a training was quite positive, but I would recommend them more if you like cooking with large pans/pots most of the time.
Also, in reference to the brand being sold several times, I think I know the review you are talking about, and it is a bit misleading/hyperbolic. Fisher&amp;Paykel bought DCS (from the guys who went on to make Capital), and Fisher&amp;Paykel was bought by Haier. A brand being bought does not indicate it's going downhill - depends on what happens after that (look at when Sub Zero bought Wolf). As an appliance dealer, life goes on. The factories stay in the same place for the most part. Haier also bought GE last year, if that gives any perspective. Part of the general trend of consolidation of companies in the marketplace, where global corporations buy smaller companies.

**Q: Quartz countertop seam through kitchen sink** *(in Design Dilemma)*

We just had this quartz countertop installed and when I saw the seam i was reassured by my husband that we would barely notice it when they were done. This is the final product, they have polished this and say it is finished. Is this standard? Should I complain? Is there anything they can do to make it less obvious?

A: From a execution perspective, the seam at the sink or cooktop is the place where it is the shortest, and also the easiest for the shop to do. If you judge a seam's visibility by length, that would be the place to put it.
But I always advise our customers on seam location, and personally I almost always see if they can locate it elsewhere, usually at a corner area. It always results in a longer, sometimes much longer seam, but to me, it's worth it to move the seam out of a high traffic area, which the sink and cooktop necessarily are. Not only is it not placed in a spot where you're constantly staring at it, more importantly, it's not in a location where it will be constantly getting splashed with water, food, sauce, crud etc. If there is any spot that would benefit from a seamless countertop, the sink and cooktop areas would be the place. That's my philosophy.
Plus, the manufacturers recommend locating seams in the corner if you're not going to do a rounded inside corner, like if you're doing a miter edge buildup.

**Q: Love the wok station,where it is from?** *(in Photo Questions)*

A: Correct. There is a series of specialty Capital ranges and rangetops in 30&quot;, 36&quot; and 48&quot; wide with a dedicated Wok burner with a 25,000BTU 3-ring open burner that we offer. We have a strong specialty in Asian cooking, and aside from this, there are a couple other solutions for wok cooking or Chinese cooking out in the market, depending on the design you are hoping to have for your kitchen. Are you going for a more contemporary look or traditional? Industrial? How much oven do you need? Some of our Chinese customers will prefer to get a combi-steam oven or a steam oven in lieu of a traditional oven (since Chinese cooking has a strong steaming tradition).

**Q: Wok cooking on an induction cooktop?** *(in Photo Questions)*

Is this acceptable? What is the power of the burner? Do you need to have a flat-bottomed wok?

A: Gaggenau also makes one that is flat, but can take a round bottom wok &quot;floating&quot; on ring because of the way the inductions elements are set up there. Gives you flexibility to cook proper round wok, OR a flat skillet or stockpot.
